A new restaurant with deep cultural roots and a unique concept is preparing to open its doors in Wildwood this spring.

The Lighthouse Kitchen & Cafe, located at 3109 Pacific Avenue, will soon take over the former home of Rommadill Pickling Co.

While there is currently no update on what’s next for Rommadill, the new concept moving in is bringing something Wildwood has not seen in quite some time: a 24/7 dining experience.

For the owner and their family, this isn’t just another restaurant opening. It’s the culmination of a lifelong vision tied directly to their heritage.

Originally from Mexico, the family has spent generations growing, harvesting, and selling coffee. That connection remains strong today, with the owner’s mother, now nearly 80 years old, still actively working in coffee production.

After relocating to the United States in 2014 and settling in South Jersey, the family set their sights on opening a cafe by the shore. Wildwood, being their first home in the U.S., became the natural choice.

The concept of a cafe was intentional. It serves as a bridge between their past in Mexico, where coffee was a way of life, and their present in New Jersey, where they’ve built experience in the restaurant industry. Now, after more than a decade of work, that vision is becoming reality.

The Lighthouse Kitchen & Cafe is still actively being developed, with renovations ongoing as the team works to shape the space into their final vision.

The goal is to create more than just a place to eat. The owners want to build an environment where both locals and visitors feel comfortable, welcomed, and excited to return. Their focus centers on quality food, strong service, and an atmosphere designed to create lasting memories.

Once construction is complete, guests will be able to experience that transformation firsthand, with the potential to see how the space evolved from its previous use into something entirely new.

One of the standout menu items will be something rarely seen in the United States.

Known as the “Machete,” this dish originates from Chiapas, Mexico, the southernmost state bordering Guatemala. Its roots trace back to the 1500s, when it was known as the Quesadilla de Tapachula, named after one of the region’s largest cities.

The owner introduced the dish to the United States in 2009, and according to the team, it cannot be easily replicated due to its specific ingredients and preparation methods. It’s expected to be a centerpiece item that reflects both the family’s heritage and the authenticity they aim to bring to Wildwood.

The Lighthouse Kitchen & Cafe is targeting a mid-April 2026 opening, though an exact date has not yet been finalized.

One of the most notable aspects of the new restaurant is its operating schedule. The team plans to run the cafe 24 hours a day, seven days a week, from opening through Labor Day, marking a rare return of true around-the-clock dining in Wildwood.

After the summer season, the plan is to transition into a year-round operation, focusing primarily on breakfast and brunch, with potential expanded hours on weekends.
